This is a delicious Mexican/American dish. It tastes just like Chile Rellanos but a lot easier to make. It can be as spicy or mild as you want it. It contains quite a few eggs, but don't worry, you can reduce the fat content by using only the whites of 6 or 7 instead of 10.
10 eggs
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 pint cottage cheese -but nonfat if you want
1 pound jack cheese - I use reduced fat
1/2 cup butter melted
2 -4 ounce cans of diced green chiles. Or you can reduce this amount for a milder dish.
In a large bowl beat eggs the eggs until lemony. Add the flour, baking powder, salt, cottage cheese, jack cheese and butter. Mix until blended. Stir in chiles. Pour into a 9 x 13 pan. Back at 350 degrees for 35 minutes. Serve hot with salsa.
