INGREDIENTS
2 cups of brown sugar
1 cup of water
1 cup of peanuts (salted or unsalted)
Put the sugar and water into a saucepan and bring to boil over a low heat. Stir until the sugar has dissolved. When the mixture starts to boil, add the peanuts and blend well. Boil the mixture for about 10 - 12 minutes, stirring every now and then, or until the hard crack stage is reached (when a teaspoon of syrup dropped into water forms brittle threads).
Remove from heat and stir with a wooden spoon until the syrup starts to crystallise. Spoon the mixture onto a greased tray and cool completely.
